What is Mugolio?
Mugolio, also known as “pine cone bud syrup,” is a traditional Italian condiment made from the buds of young pine cones. These buds are carefully harvested during springtime when they are still tender and full of aromatic resin. The process involves steeping the buds in sugar syrup until their essence infuses the liquid, resulting in a unique syrupy consistency with a delicate yet intense piney flavor.
In short, mugolio is a syrup made from pine cones or spruce tips that is than fermented in brown sugar. Some choose to boil it further and others can it.

It is a very simple activity to do with even young children, but can be expanded to older children by learning about different trees and experimenting with different types of syrups. For example, how does Maple syrup differ from spruce tip syrup? Or pine cone syrup? Red pinecone syrup vs white pine cone syrup.

Mugolio can be used in the same way Maple syrup is used.
