Mangalista Pork Belly Bites with Bourbon BBQ Sauce



Ingredients:

Mangalista pork belly (cut into 1-inch cubes)

Salt and pepper

1 tbsp vegetable oil

1/2 cup BBQ sauce (store-bought or homemade)

2 tbsp bourbon

1 tbsp apple cider vinegar

1 tbsp honey

1/4 tsp smoked paprika (optional)

Fresh parsley for garnish


Instructions:

1. Cook the Pork Belly:
Preheat your oven to 375°F (190°C). Season the pork belly cubes with salt and pepper. Heat vegetable oil in a large skillet over medium-high heat. Sear the pork belly cubes on all sides until golden and crispy (about 8 minutes). Transfer the pork belly bites to a baking sheet.


2. Make the Bourbon BBQ Sauce:
In a saucepan, combine the BBQ sauce, bourbon, apple cider vinegar, honey, and smoked paprika. Bring to a simmer and cook for 5-7 minutes, or until the sauce thickens slightly.


3. Glaze and Bake:
Pour the bourbon BBQ sauce over the pork belly bites and toss to coat evenly. Place the baking sheet in the oven and bake for 15-20 minutes, or until the sauce caramelizes.


4. Serve:
Garnish with freshly chopped parsley and serve with pickles or coleslaw for a perfect bite-sized treat!
